Job Description:
Flyfish Club is seeking an experienced and dynamic Sushi Chef to work primarily on the Maki station at Flyfish Club. The ideal candidate will have multiple years of experience rolling different styles of maki rolls and have a through grasp on both the execution of maki rolls and on the creative side be able to generate different rolls as we change the menu.

Flyfish Club is an exclusive members club located on the Lower East Side of Manhattan, NYC. Created and operated by the VCR Group, Flyfish Club spans over three floors with a Restaurant and Bar, Private Dining Room, Cocktail Lounge that features live entertainment, as well as a 14 seat Omakase Room that offers two seatings every night. 

Key Responsibilities & Requirements:

• Delivers exceptional execution of all dishes and works well in a team environment. 
• Knows and has experience with the different cuts of a fish loin and fillets which are used in sushi making and can train to a team. 
• Posseses knife skills for more advanced fish butchery
• Prepare all food products according to the prescribed methods, both during service and prior preparation
• Cuts fish, slices sashimi and prepares nigiri with speed, accuracy & consistency
• Leads by example in all aspects of the job, including sanitary practices, work detail, consistency, and reliability
• Perform job functions with attention to detail, speed, and accuracy 
• Acquire recipe knowledge and section setup to smoothly execute service
• Ensure all items on station are properly stored, labeled and dated

Compensation Details

Compensation: Hourly $23-$26 depending on experience
